Skim every step before you start. Half of all kitchen disasters happen because someone discovered 'chill overnight' at 6 p.m.

Heat the pan, then the oil

A properly heated pan is the difference between a golden sear and grey, watery vegetables. Listen for the sizzle.

Salt as you go, not at the end

Layered seasoning makes food taste built, not dressed. A pinch with the onions, another with the meat, one more before serving.
